When I first came into Le Select, I didn't understand what a bichon was.
And to go into a kitchen like Le Select, that made the fundamentals of French cuisine every single day,
three years solid, that is such a pimple moment in my life, in my cooking career, to have Le Select
as my first real restaurant experience as a young chef. It was meant to be.
